‘Karma Chow’s Ultimate Cookbook’: Chickpea “Tuna” Salad

Now, I loves me a good tuna fish sandwich. It was one of the hardest things to say goodbye to after becoming vegan. Some of my fondest memories are of going to the cute little coffee shop in my home town where they made the best tuna sandwich. Seriously. No one made better tuna…til now. Because, this tuna isn’t tuna. It’s a delish faux fish!
2 cans of chickpeas and chopped up walnuts and or almonds give your fishy faux its protein base. The rest is veggies and herbs: chopped red onion and dill. Apple cider vinegar some mustard, and of course Vegenaise, give moisture to this delish faux fish dish. Add some Dulse flakes for an extra convincing fishy taste.
